  • 2 tablespoons vegetable oil
  • 2 eggs, beaten
  • 1/2 cup diced carrots
  • 1/2 cup peas (fresh or frozen)
  • 3 green onions, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional, for extra umami)
  • 1 teaspoon sesame oil
  • 1/2 teaspoon white pepper (or black pepper)
  • 1 cup cooked protein of choice (chicken, shrimp, beef, tofu, or pork)

Instructions

  1. Prepare Ingredients: Ensure vegetables are chopped, eggs are beaten, and rice is cooled to prevent clumping.
  2. Cook the Eggs: Heat 1 tablespoon oil in a large pan over medium-high heat. Scramble eggs until just cooked, then remove from the pan.
  3. Sauté Aromatics & Vegetables: In the same pan, add remaining oil. Sauté garlic, ginger, and white parts of green onions until fragrant. Stir-fry carrots and peas for 2–3 minutes.
  4. Stir-Fry the Rice: Add cold rice, breaking up clumps. Stir-fry for 3–4 minutes.
  5. Season the Dish: Drizzle in soy sauce, oyster sauce, and sesame oil. Add eggs and protein, mix well, and season with white pepper.
  6. Finish & Serve: Toss in the green onion tops. Serve hot and enjoy!
