- 1 lb chicken feet, cleaned and nails trimmed
- 4 cups water (for boiling)
- 1 tbsp salt
- 2 tbsp soy sauce
- 2 tbsp oyster sauce
- 1 tbsp hoisin sauce
- 1 tbsp sugar
- 3 cloves garlic, minced
- 1-inch piece of ginger, sliced
- 2-star anise
- 1 cinnamon stick
- 1 tbsp rice wine or Shaoxing wine
- 1 tbsp cornstarch (optional, for thickening)
- 1 tbsp vegetable oil
- 1 tsp sesame oil
- 1 scallion, chopped (for garnish)
- 1 red chili, sliced (optional, for spice)
Instructions
- Clean and Prepare the Chicken Feet
- Wash the chicken feet thoroughly under running water.
- Trim off the nails using kitchen scissors or a sharp knife.
- Rub with salt to remove impurities, then rinse again.
- Blanch the Chicken Feet
- Bring 4 cups of water to a boil.
- Add chicken feet and boil for 5 minutes to remove excess fats and impurities.
- Drain and rinse under cold water.
- Fry or Braise (Optional for Extra Flavor)
- Heat vegetable oil in a pan and fry chicken feet until golden brown.
- Remove and drain excess oil (this enhances texture but is optional).
- Simmer in a Flavorful Sauce
- Heat sesame oil in a pot, sauté garlic, ginger, star anise, and cinnamon stick until fragrant.
- Add soy sauce, oyster sauce, hoisin sauce, sugar, and rice wine; stir to combine.
- Add 2 cups of water, bring to a simmer, then add chicken feet.
- Cover and simmer on low heat for 1.5 to 2 hours until tender.
- If the sauce is too thin, mix cornstarch with 2 tbsp water and stir in to thicken.
- Serve and Garnish
- Transfer chicken feet to a plate.
- Garnish with chopped scallions and sliced red chili.
- Serve hot and enjoy!
