- 1 can (10 oz) red enchilada sauce
- 1 can (10 oz) diced tomatoes with green chilies (e.g., Rotel)
- 1 cup frozen or canned corn, drained
- 1 can (15 oz) black beans, drained and rinsed
- 6 small corn tortillas, torn into bite-sized pieces
- 2 cups shredded Mexican cheese blend (divided)
- ½ cup sour cream or Greek yogurt
- ¼ cup chopped fresh cilantro (optional)
- ½ cup diced green onions (optional)
Instructions
- Prep the Chicken
Place the chicken breasts in the slow cooker. Sprinkle with salt, pepper, cumin, chili powder, garlic powder, and onion powder. - Add the Wet Ingredients
Pour the enchilada sauce and diced tomatoes (with green chilies) over the chicken. Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender and shreds easily. - Shred the Chicken
Remove the cooked chicken from the slow cooker, shred it with two forks, and return it to the pot. - Layer the Ingredients
Add the black beans, corn, and torn tortillas to the slow cooker. Stir gently to combine. - Add Cheese & Cook
