  • 1 tablespoon red fermented bean curd (optional, for traditional red color)
  • ½ teaspoon red food coloring (optional)

For basting:

  • 1 tablespoon honey
  • 1 tablespoon water

Instructions

  1. Prepare the Marinade
    In a large bowl, whisk together all marinade ingredients until well combined.
  2. Marinate the Chicken
    Add chicken to the marinade, ensuring full coverage. Cover and refrigerate for at least 4 hours, preferably overnight.
  3. Preheat the Oven
    Set the oven to 400°F (200°C). Line a baking tray with aluminum foil and place a greased wire rack on top.
  4. Arrange and Bake
    Remove chicken from marinade, allowing excess to drip off. Place on the wire rack and roast for 25-30 minutes, turning halfway through.
  5. Baste for a Glossy Finish
    Mix honey and water for basting. During the last 10 minutes of baking, brush the chicken with the mixture every 5 minutes.
  6. Broil for Extra Char
    For an authentic finish, broil on high for 2-3 minutes while watching closely to avoid burning.
