  • 1 lb ground beef (80/20 recommended)
  • 1/2 lb ground pork (optional for extra flavor)
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder (optional)
  • 1/2 tsp onion powder (optional)
  • 2 tbsp butter or beef tallow (for frying)

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Mix the ingredients: In a large mixing bowl, combine ground beef, ground pork (if using), ricotta cheese, Parmesan cheese, egg, salt, pepper, garlic powder, and onion powder. Mix gently until just combined.
  3. Form the meatballs: Use your hands or a scoop to form meatballs about 1.5 inches in diameter. Place them on the prepared baking sheet.
  4. Sear the meatballs: In a large skillet, heat butter or beef tallow over medium-high heat. Sear the meatballs on all sides until golden brown, about 2-3 minutes per side.
  5. Bake: Transfer the seared meatballs back to the baking sheet and bake for 10-12 minutes or until they reach an internal temperature of 160°F (71°C).
  6. Rest and serve: Let the meatballs rest for a few minutes before serving. Enjoy them plain, with a drizzle of melted butter, or alongside a creamy dipping sauce.
