Ingredients

Scale
  • 2 salmon fillets (6 oz each)
  • 1 bunch asparagus, trimmed
  • 2 tablespoons butter, melted
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Juice of 1 lemon
  • 1 teaspoon lemon zest
  • 1 teaspoon honey (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon fresh parsley, chopped
  • 2 lemon slices (for garnish)

Instructions

  1. Preheat and Prepare: Preheat oven to 375°F (190°C). Cut two large sheets of aluminum foil.
  2. Make the Lemon Garlic Butter: In a bowl, mix melted butter, olive oil, garlic, lemon juice, zest, honey (if using), salt, black pepper, and red pepper flakes.
  3. Assemble the Foil Packets: Place each salmon fillet in the center of a foil sheet. Arrange asparagus alongside. Drizzle with the butter mixture, top with lemon slices, and sprinkle with parsley.
  4. Seal the Packets: Fold foil over the salmon and asparagus, sealing the edges tightly.
  5. Bake: Place packets on a baking sheet and bake for 15-20 minutes, or until salmon reaches an internal temperature of 145°F (63°C).
  6. Serve: Open foil carefully (watch for steam) and serve immediately, garnished with extra parsley and lemon wedges if desired.

Notes

  • Variations: Add other veggies like cherry tomatoes or zucchini, swap parsley for dill, or increase spice with cayenne.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 2 days.
  • Reheating: Warm in the oven at 300°F (150°C) for 10 minutes or microwave for 1-2 minutes. Avoid overheating.
