For the Chicken:

For the Vegetables:
- 1 zucchini (sliced into half-moons)
- 1 cup mushrooms (sliced)
- 1/2 onion (sliced)
- 1/2 red bell pepper (sliced)
- 1 tbsp soy sauce
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
For the Yum Yum Sauce:
- 1/2 cup mayonnaise
- 1 tbsp ketchup
- 1 tsp rice vinegar
- 1 tsp sugar
- 1/2 tsp paprika
- 1 tbsp water (to thin out, if needed)
Instructions
- Prepare the Chicken:
- In a bowl, mix the chicken with soy sauce, sesame oil, garlic powder, onion powder, ginger powder, salt, and black pepper.
- Let marinate for at least 10 minutes (or up to an hour for more flavor).
- Prepare the Vegetables:
- Toss the zucchini, mushrooms, onion, and bell pepper with soy sauce, olive oil, garlic powder, and black pepper.
- Cook in the Air Fryer:
- Preheat air fryer to 380°F (193°C).
- Add chicken to the air fryer basket in a single layer. Cook for 10 minutes, shaking the basket halfway through.
- Add vegetables and cook for another 8-10 minutes, shaking once more for even cooking.
- Make the Yum Yum Sauce:
- In a small bowl, mix mayonnaise, ketchup, rice vinegar, sugar, and paprika until smooth.
- Add water if needed to reach the desired consistency.
