Instructions
Step 1: Prepare the Cream Cheese Filling
- In a small bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth.
- Scoop small teaspoons of the mixture onto a parchment-lined baking sheet.
- Freeze for at least 30 minutes.
Step 2: Make the Cookie Dough
- In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In a large mixing bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.
- Add egg, milk, vanilla extract, vinegar, and red food coloring. Mix until well combined.
- Gradually incorporate the dry ingredients into the wet ingredients, mixing until just combined.
- Fold in white chocolate chips if using.
Step 3: Assemble the Cookies
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Scoop about 1 ½ tablespoons of cookie dough and flatten it in your palm.
- Place a frozen cream cheese ball in the center and wrap the dough around it, sealing the edges.
- Arrange stuffed cookies on the baking sheet, spacing them about 2 inches apart.
