- 2 pounds turnips, peeled and grated
- 2 cups granulated sugar
- 1 cup water
- Juice and zest of 1 lemon
- Juice and zest of 1 orange
- 1 cinnamon stick
- ½ teaspoon ground gi
Instructions
Step 1: Prepare the Turnips
- Peel the turnips and grate them using a food processor or a box grater.
- Rinse the grated turnips under cold water to remove any excess bitterness.
- Drain well and set aside.
Step 2: Cook the Base
- In a large pot, combine the sugar and water over medium heat. Stir until the sugar dissolves completely.
- Add the grated turnips, lemon juice, orange juice, and zest. Stir to mix.
- Toss in the cinnamon stick, ginger (if using), and salt.
Step 3: Simmer the Jam
- Bring the mixture to a gentle boil, then reduce the heat to low.
- Simmer uncovered, stirring occasionally, for about 45-60 minutes or until the turnips become translucent and the mixture thickens.
- Remove the cinnamon stick and check the consistency—if it coats the back of a spoon, it’s ready.
Step 4: Blend and Store
- For a smoother jam, use an immersion blender to puree the mixture. If you prefer a chunky texture, leave it as is.
- Pour the hot jam into sterilized jars, leaving about ¼ inch of space at the top.
- Seal the jars and let them cool completely before storing in the refrigerator or processing in a water bath for longer shelf life.
