  • 500g all-purpose flour
  • 1 packet (7g) instant dry yeast
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 300ml warm water
  • 2 tablespoons olive oil
  • 1 tablespoon yogurt (optional, for extra softness)
  • 1 egg yolk (for brushing)
  • 1 tablespoon sesame or nigella seeds (for topping)

Instructions

Step 1: Prepare the Dough

  1. In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5-10 minutes until it becomes frothy.
  2. In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
  3. Mix with a wooden spoon or your hands until a rough dough forms.
  4. Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.
  5. Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Step 2: Shape the Bread

  1. Once the dough has risen, punch it down to release air.
  2. Transfer it to a floured surface and divide it into two equal parts.
  3. Shape each portion into a round or oval shape, about 1 inch thick.
  4. Place the shaped dough on a baking sheet lined with parchment paper.
  5. Cover with a cloth and let it rest for another 30 minutes.

Step 3: Bake the Bread

  1. Preheat your oven to 220°C (430°F).
  2. In a small bowl, mix the egg yolk with a teaspoon of water and brush it over the bread.
  3. Sprinkle sesame or nigella seeds on top.
  4. Bake in the preheated oven for about 15-20 minutes or until golden brown and puffed up.
  5. Remove from the oven and let cool slightly before serving.
