For the Fried Chicken:

  • 2 large boneless, skinless chicken breasts (cut into slider-sized pieces)
  • 1 cup buttermilk
  • 1 teaspoon hot sauce
  • 1 1/2 cups all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon baking powder
  • 2 cups vegetable oil (for frying)

For the Biscuits:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 6 tablespoons unsalted butter (cold, cut into small cubes)
  • 3/4 cup buttermilk (cold)
  • 1 tablespoon honey (optional)

Optional Toppings:

  • Honey or maple syrup
  • Pickles
  • Hot sauce
  • Cheese
  • Bacon

Instructions

Step 1: Prepare the Chicken

  1. In a bowl, mix buttermilk and hot sauce. Add chicken pieces and marinate for at least 30 minutes (or overnight for deeper flavor).
  2. In a separate bowl, whisk together flour, cornstarch, salt, black pepper, garlic powder, paprika, cayenne pepper, and baking powder.
  3. Heat vegetable oil in a deep pan to 350°F (175°C).
  4. Remove chicken from buttermilk, letting excess drip off. Dredge in the flour mixture, pressing to coat well. Repeat for extra crispiness.
  5. Fry chicken in batches for 3-4 minutes per side until golden brown and cooked through (internal temperature should reach 165°F or 75°C). Drain on a wire rack.

Step 2: Make the Biscuits

  1. Preheat oven to 425°F (220°C).
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cut in butter using a pastry cutter or fingers until the mixture resembles coarse crumbs.
  4. Gradually add cold buttermilk and stir until dough just comes together.
  5. Roll dough to 1-inch thickness and cut into small rounds using a biscuit cutter.
  6. Place on a parchment-lined baking sheet and bake for 12-15 minutes or until golden brown.

Step 3: Assemble the Sliders

  1. Split the warm biscuits in half.
  2. Place a piece of fried chicken on the bottom half.
  3. Add desired toppings (honey, pickles, hot sauce, etc.).
  4. Top with the biscuit lid and serve warm.
