    • 34 lb chuck roast
    • 1 tbsp olive oil
    • 1 tsp salt
    • ½ tsp black pepper
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • 1 tsp dried thyme
    • 1 tsp dried rosemary
  • Vegetables:

    • 1 onion, sliced
    • 4 carrots, cut into chunks
    • 34 potatoes, cut into chunks
  • Broth & Flavor Enhancers:

    • 3 cups beef broth
    • 2 tbsp Worcestershire sauce
    • 2 tbsp tomato paste
    • 3 cloves garlic, minced

 

  • For Gravy:

    • 2 tbsp cornstarch
    • 2 tbsp water (for slurry)

Instructions

Prepare the Roast:
Pat dry the chuck roast and season with salt, pepper, garlic powder, onion powder, thyme, and rosemary.

2. Sear the Meat (Optional but Recommended):
Heat olive oil in a skillet over medium-high heat. Sear the roast for 3-4 minutes per side until browned for enhanced flavor.

3. Load the Crockpot:
Layer the onions, carrots, and potatoes at the bottom. Place the roast on top.

4. Add Liquid and Flavor:
Whisk together beef broth, Worcestershire sauce, tomato paste, and minced garlic. Pour over the roast and vegetables.

5. Slow Cook:
Cover and cook on low for 8-10 hours or high for 5-6 hours, until the beef is tender and shreds easily.

6. Make the Gravy:
Remove the roast and vegetables. Mix cornstarch with water to form a slurry, stir into the slow cooker, and cook on high for 5-10 minutes until thickened.

7. Serve:
Slice or shred the roast, spoon the gravy over the top, and serve with the vegetables.
