For the Pie Crust (or use a pre-made one):
- 1 ¼ cups all-purpose flour
- ½ teaspoon salt
- ½ cup unsalted butter, chilled and cubed
- 3 to 4 tablespoons ice water
For the Filling:
- 1 cup semisweet chocolate chips
- ½ cup unsalted butter
- 1 cup light corn syrup
- ¾ cup brown sugar, packed
- 3 large eggs
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 1 ½ cups pecan halves
- 1 tablespoon bourbon (optional)
Instructions
Prepare the Pie Crust
- In a mixing bowl, whisk together flour and salt.
- Cut in chilled butter until the mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, mixing until the dough holds together.
- Form into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
- Roll out the dough on a floured surface to fit a 9-inch pie pan. Transfer to the pan and crimp the edges.
Make the Filling
- Preheat oven to 350°F (175°C).
- In a saucepan over low heat, melt butter and chocolate chips, stirring until smooth. Let cool slightly.
- In a separate bowl, whisk together corn syrup, brown sugar, eggs, vanilla, and salt.
- Gradually whisk in the melted chocolate mixture until fully combined.
- Stir in pecans and bourbon (if using).
Assemble and Bake
- Pour the filling into the prepared pie crust.
- Bake for 50–55 minutes, or until the center is set and slightly wobbly.
- Remove from oven and let cool completely before slicing.

- Refrigerator: Store covered for up to 4 days.
- Freezer: Wrap tightly and freeze for up to 3 months.
- Reheating: Warm slices in a 300°F oven for 10 minutes or serve at room temperature.
