  • 1 cup light corn syrup
  • ¾ cup brown sugar, packed
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 ½ cups pecan halves
  • 1 tablespoon bourbon (optional)

Instructions

Prepare the Pie Crust

  1. In a mixing bowl, whisk together flour and salt.
  2. Cut in chilled butter until the mixture resembles coarse crumbs.
  3. Gradually add ice water, one tablespoon at a time, mixing until the dough holds together.
  4. Form into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
  5. Roll out the dough on a floured surface to fit a 9-inch pie pan. Transfer to the pan and crimp the edges.

Make the Filling

  1. Preheat oven to 350°F (175°C).
  2. In a saucepan over low heat, melt butter and chocolate chips, stirring until smooth. Let cool slightly.
  3. In a separate bowl, whisk together corn syrup, brown sugar, eggs, vanilla, and salt.
  4. Gradually whisk in the melted chocolate mixture until fully combined.
  5. Stir in pecans and bourbon (if using).

Assemble and Bake

  1. Pour the filling into the prepared pie crust.
  2. Bake for 50–55 minutes, or until the center is set and slightly wobbly.
  3. Remove from oven and let cool completely before slicing.
