  • 8 oz mushrooms (button, cremini, or portobello), sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup Parmesan cheese, grated
  • 1 tsp dried Italian seasoning
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes (optional)
  • 12 oz pasta (fettuccine, penne, or spaghetti)
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook the Pasta

    • Bring a large pot of salted water to a boil.
    • Cook pasta according to package instructions until al dente. Drain and set aside.
  • Cook the Chicken

    • Heat olive oil in a large skillet over medium-high heat.
    • Season chicken with salt and pepper.
    • Cook for 5–7 minutes, flipping occasionally, until golden brown and cooked through. Remove and set aside.
  • Sauté the Mushrooms

    • In the same skillet, melt butter.
    • Add mushrooms and cook for 5 minutes until softened and slightly caramelized.
    • Stir in garlic and cook for 30 seconds until fragrant.
  • Prepare the Creamy Sauce

    • Pour in chicken broth, scraping up any browned bits from the pan.
    • Reduce heat to medium-low and add heavy cream, Parmesan cheese, and Italian seasoning. Stir to combine.
    • Let simmer for 3–4 minutes to thicken slightly.
  • Combine Everything

    • Return cooked chicken to the skillet and coat with the sauce.
    • Add drained pasta and toss to combine.
    • Adjust seasoning with additional salt, pepper, or red pepper flakes if desired.
  • Serve

    • Garnish with fresh parsley and extra Parmesan cheese.
    • Serve immediately and enjoy!
