- 2 cups all-purpose flour
- 1 cup whole wheat flour (or substitute with more all-purpose flour)
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 tablespoon sugar (optional)
- 1 cup sourdough discard
- 3/4 cup buttermilk (plus more if needed)
Instructions
- Preheat and Prepare: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease a cast-iron skillet.
- Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, salt, and sugar (if using).
- Incorporate Wet Ingredients: Add sourdough discard, buttermilk, and melted butter. Stir until the dough comes together. If too dry, add more buttermilk, one tablespoon at a time.
- Form the Dough: Turn onto a lightly floured surface and shape into a round loaf. Do not overwork.
- Score and Bake: Place dough on the prepared sheet or skillet. Score a deep “X” on top. Bake for 30–35 minutes until the bread sounds hollow when tapped.
- Cool and Serve: Let cool on a wire rack for at least 15 minutes before slicing. Serve warm with butter, jam, or alongside soups and stews.

- Sweet Version: Add 1/2 cup raisins or currants and an extra tablespoon of sugar.
- Savory Version: Mix in 1/2 cup shredded cheese and 1 teaspoon dried herbs.
