Ingredients
Scale
- 1 lb ground beef (85% lean)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can kidney beans, drained and rinsed
- 1 (15 oz) can whole kernel corn, drained
- 1 (15 oz) can diced tomatoes with juices
- 1 (1 oz) packet taco seasoning
- 1 (1 oz) packet ranch dressing mix
- 4 cups beef broth (low-sodium recommended)
- Optional toppings: shredded cheese, sour cream, diced avocado, chopped cilantro, tortilla chips
Instructions
- In a large pot or Dutch oven over medium heat, cook the ground beef, breaking it into crumbles, until about halfway done (approximately 3-4 minutes).
- Add the diced onion and minced garlic to the pot with the beef. Continue cooking until the beef is fully browned and the onions are translucent and fragrant, about 5-7 minutes. Drain excess grease if necessary.
- Stir in the black beans, kidney beans, corn, and diced tomatoes with their juices.
- Add the taco seasoning and ranch dressing mix, stirring to combine.
- Pour in the beef broth and stir well. Bring the mixture to a boil, then reduce the heat to maintain a gentle simmer.
- Let the soup simmer uncovered for 15-20 minutes to allow the flavors to meld and the broth to slightly reduce.
- Ladle the soup into bowls and serve hot with optional toppings as desired.
Notes
- For a spicier soup, choose a hot taco seasoning or add a pinch of cayenne pepper.
- To make the soup vegetarian, substitute the ground beef with a plant-based alternative and use vegetable broth instead of beef broth.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months.
- This soup pairs well with cornbread or a simple green salad for a complete meal.
