Taco Soup Recipe Easy

  • Total Time: 30 minutes
  • Yield: 6 servings 1x

Description

This Easy Taco Soup combines seasoned ground beef, hearty beans, corn, and tomatoes in a flavorful broth, delivering all the beloved flavors of tacos in a comforting soup form. Ready in just 30 minutes, itโ€™s perfect for busy weeknights or casual gatherings.

Ingredients

Scale
  • 1 lb ground beef (85% lean)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can whole kernel corn, drained
  • 1 (15 oz) can diced tomatoes with juices
  • 1 (1 oz) packet taco seasoning
  • 1 (1 oz) packet ranch dressing mix
  • 4 cups beef broth (low-sodium recommended)
  • Optional toppings: shredded cheese, sour cream, diced avocado, chopped cilantro, tortilla chips

Instructions

  1. In a large pot or Dutch oven over medium heat, cook the ground beef, breaking it into crumbles, until about halfway done (approximately 3-4 minutes).
  2. Add the diced onion and minced garlic to the pot with the beef. Continue cooking until the beef is fully browned and the onions are translucent and fragrant, about 5-7 minutes. Drain excess grease if necessary.
  3. Stir in the black beans, kidney beans, corn, and diced tomatoes with their juices.
  4. Add the taco seasoning and ranch dressing mix, stirring to combine.
  5. Pour in the beef broth and stir well. Bring the mixture to a boil, then reduce the heat to maintain a gentle simmer.
  6. Let the soup simmer uncovered for 15-20 minutes to allow the flavors to meld and the broth to slightly reduce.
  7. Ladle the soup into bowls and serve hot with optional toppings as desired.

Notes

  • For a spicier soup, choose a hot taco seasoning or add a pinch of cayenne pepper.
  • To make the soup vegetarian, substitute the ground beef with a plant-based alternative and use vegetable broth instead of beef broth.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months.
  • This soup pairs well with cornbread or a simple green salad for a complete meal.
