- 1 (15-oz) can black beans, drained and rinsed
- 1 (15-oz) can kidney beans, drained and rinsed
- 1 (15-oz) can corn, drained
- 1 (10-oz) can diced tomatoes with green chilies (like Rotel)
- 1 (15-oz) can tomato sauce
- 2 cups beef broth (or chicken broth)
- 1 packet (1 oz) taco seasoning
- 1 tsp cumin
- 1/2 tsp chili powder (adjust to taste)
- Salt and pepper to taste
Instructions
- Cook the Beef: In a large pot over medium heat, brown the ground beef, breaking it up as it cooks. Drain excess fat.
- Sauté Aromatics: Add diced onion and minced garlic. Sauté for 2-3 minutes until softened.
- Add Remaining Ingredients: Stir in the black beans, kidney beans, corn, diced tomatoes, tomato sauce, and broth. Mix well.
- Season the Soup: Add taco seasoning, cumin, chili powder, salt, and pepper. Stir to combine.
- Simmer: Bring to a gentle boil, then reduce heat and let simmer uncovered for 20-25 minutes, stirring occasionally.
- Serve & Garnish: Ladle into bowls and top with cheese, sour cream, jalapeños, or crushed tortilla chips. Enjoy!

- Vegetarian: Omit meat and add an extra can of beans or lentils.
