Instructions

  1. Preheat the Oven
    • Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Cook the Beef Mixture
    • Heat olive oil in a large skillet over medium heat.
    • Cook onions until softened (about 3 minutes), then add garlic and cook for 30 seconds.
    • Brown ground beef, drain excess grease if necessary.
    • Stir in taco seasoning, diced tomatoes, black beans, corn, and enchilada sauce. Simmer for 5 minutes.
  3. Assemble the Casserole
    • Spread a thin layer of beef mixture in the baking dish.
    • Layer tortilla quarters, followed by half of the sour cream and shredded cheese.
    • Repeat layers with remaining ingredients.
  4. Bake
    • Cover with foil and bake for 20 minutes.
    • Remove foil and bake another 10 minutes until cheese is bubbly.
  5. Serve and Enjoy
    • Let cool for 5 minutes before serving.
