- 6 small flour or corn tortillas, cut into quarters
- 1 tablespoon olive oil
- Salt and pepper to taste

Instructions
- Preheat the Oven
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Cook the Beef Mixture
- Heat olive oil in a large skillet over medium heat.
- Cook onions until softened (about 3 minutes), then add garlic and cook for 30 seconds.
- Brown ground beef, drain excess grease if necessary.
- Stir in taco seasoning, diced tomatoes, black beans, corn, and enchilada sauce. Simmer for 5 minutes.
- Assemble the Casserole
- Spread a thin layer of beef mixture in the baking dish.
- Layer tortilla quarters, followed by half of the sour cream and shredded cheese.
- Repeat layers with remaining ingredients.
- Bake
- Cover with foil and bake for 20 minutes.
- Remove foil and bake another 10 minutes until cheese is bubbly.
- Serve and Enjoy
- Let cool for 5 minutes before serving.
