- 1 cup jasmine rice
- 2 cups fresh pineapple, diced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced

- 2 tablespoons olive oil
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1 teaspoon ginger, grated
- 1/2 teaspoon red pepper flakes (optional)

Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the diced chicken breasts and season with salt and pepper. Cook for 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In a medium saucepan, rinse the jasmine rice under cold water until the water runs clear. Add 2 cups of water and a pinch of salt, then bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes until the rice is tender and the water is absorbed. Fluff the rice with a fork and set aside.
- In the same skillet used for the chicken, heat the remaining olive oil over medium heat. Add the diced onion, minced garlic, and grated ginger, and sauté for 2 minutes until fragrant. Add the sliced bell peppers and diced pineapple, cooking for another 3-4 minutes until the vegetables are tender.
- Return the cooked chicken to the skillet with the vegetables and pineapple. Stir in the soy sauce, honey, and red pepper flakes (if using). Cook for another 2 minutes, allowing the flavors to meld together. Serve the pineapple chicken and rice mixture over the prepared jasmine rice, garnished with fresh cilantro.
