For the Salad:
- 4 cups kale, stems removed and chopped
- 2 ripe peaches, sliced
- 1 cup fresh blueberries
- 1/4 cup crumbled goat cheese or feta
- 1/4 cup toasted almonds or pecans
- 1/4 cup thinly sliced red onion
For the Dressing:
- 3 tablespoons extra virgin olive oil
- 1 tablespoon fresh lemon juice or balsamic vinegar
- 1 teaspoon honey or maple syrup
- 1 teaspoon Dijon mustard
- Salt and pepper, to taste
Instructions
- Prepare the Kale: Wash and dry the kale, remove stems, and chop leaves into bite-sized pieces. Massage with a drizzle of olive oil for 2–3 minutes to soften.
- Make the Dressing: Whisk together olive oil, lemon juice (or balsamic vinegar), honey, Dijon mustard, salt, and pepper in a small bowl or jar until combined.
- Assemble the Salad: In a large bowl, mix massaged kale, peaches, blueberries, red onion, and toasted nuts. Drizzle with dressing and toss gently to coat.
- Add the Cheese and Serve: Sprinkle crumbled goat cheese or feta on top. Serve immediately or let sit for a few minutes for flavors to meld.
Notes
- Storage: Best enjoyed fresh but can be stored in an airtight container in the fridge for up to 24 hours. Store dressing separately if preparing in advance.
- Variations: Add grilled chicken or chickpeas for protein, swap greens for arugula or spinach, or use different nuts and cheeses for variety.
