Stuffed Pepper Soup

  • Total Time: 45 minutes

Description

Stuffed Pepper Soup is a delicious and comforting dish that brings all the flavors of classic stuffed peppers into a warm, hearty bowl. Perfect for chilly evenings or meal prep, this soup is packed with ground beef, bell peppers, tomatoes, and aromatic spices. It’s a family-friendly recipe that’s easy to make and incredibly satisfying.

Ingredients

Scale
  • 1 lb ground beef (or ground turkey for a lighter option)
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 3 bell peppers (red, green, or yellow), diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 4 cups beef broth (or vegetable broth)
  • 1 cup cooked rice (white or brown)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp paprika
  • Salt and black pepper to taste
  • 2 tbsp olive oil
  • Shredded cheese and fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onions and minced garlic, sautéing until fragrant and translucent (about 3-4 minutes).
  2. Add the ground beef to the pot and cook until fully browned, breaking it into small pieces as it cooks. Drain any excess fat if needed.
  3. Stir in the diced bell peppers, canned tomatoes, and tomato sauce. Let the mixture simmer for 5 minutes to soften the peppers and meld the flavors.
  4. Pour in the beef broth and season with oregano, basil, paprika, salt, and pepper. Bring to a boil, then reduce heat and let the soup simmer for 20-25 minutes. Stir in the cooked rice during the last 5 minutes of cooking.
  5. Ladle the stuffed pepper soup into bowls and top with shredded cheese and fresh parsley if desired.

Notes

  • Vegetarian Option: Swap ground beef for lentils or plant-based crumbles.
  • Spicier Version: Add a pinch of red pepper flakes or diced jalapeños.
  • Slow Cooker Method: Brown the beef first, then add all ingredients to a slow cooker and cook on low for 6-8 hours.
  • Freezing: This soup freezes well—store in airtight containers for up to 3 months.
