For the Stuffed Catfish:
- 4 catfish fillets (boneless and skinless)
- 1 cup shrimp (peeled, deveined, and chopped)

- 1/2 cup shredded mozzarella or Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon lemon juice
- 2 tablespoons butter (melted)
- 1/4 cup breadcrumbs (optional, for topping)
Instructions
Prepare the Filling
- In a pan over medium heat, cook the chopped shrimp for 2-3 minutes until pink. Set aside.
- In a mixing bowl, combine the cooked shrimp, chopped spinach, cream cheese, shredded cheese, garlic powder, onion powder, paprika, salt, and pepper. Mix until well combined.
2. Prepare the Catfish
- Preheat your oven to 375°F (190°C).
- Lay the catfish fillets flat and carefully create a pocket by slicing them horizontally, being careful not to cut all the way through.
- Drizzle the fillets with lemon juice and lightly season with salt and pepper.
3. Stuff and Bake
- Spoon the prepared filling into each catfish fillet, gently pressing it inside.
- Brush the fillets with melted butter and sprinkle with breadcrumbs if using.
- Place the fillets on a greased baking dish and bake for 20-25 minutes, or until the fish is opaque and flakes easily with a fork.
4. Serve and Enjoy
- Remove the catfish from the oven and let it rest for 5 minutes.
- Garnish with fresh herbs or an extra squeeze of lemon juice before serving.
