  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon lemon juice
  • 2 tablespoons butter (melted)
  • 1/4 cup breadcrumbs (optional, for topping)

Instructions

Prepare the Filling

  • In a pan over medium heat, cook the chopped shrimp for 2-3 minutes until pink. Set aside.
  • In a mixing bowl, combine the cooked shrimp, chopped spinach, cream cheese, shredded cheese, garlic powder, onion powder, paprika, salt, and pepper. Mix until well combined.

2. Prepare the Catfish

  • Preheat your oven to 375°F (190°C).
  • Lay the catfish fillets flat and carefully create a pocket by slicing them horizontally, being careful not to cut all the way through.
  • Drizzle the fillets with lemon juice and lightly season with salt and pepper.

3. Stuff and Bake

  • Spoon the prepared filling into each catfish fillet, gently pressing it inside.
  • Brush the fillets with melted butter and sprinkle with breadcrumbs if using.
  • Place the fillets on a greased baking dish and bake for 20-25 minutes, or until the fish is opaque and flakes easily with a fork.

4. Serve and Enjoy

  • Remove the catfish from the oven and let it rest for 5 minutes.
  • Garnish with fresh herbs or an extra squeeze of lemon juice before serving.
