- 1 teaspoon lime juice
- 1 teaspoon chili powder
- 1/4 cup cotija cheese, crumbled
- 1 tablespoon chopped cilantro
For the Rice Bowl:
- 2 cups cooked rice (white, brown, or cauliflower rice)
- 1/4 cup black beans (optional)
- 1/4 cup diced tomatoes
- 1/4 cup diced red onion
- 1/2 avocado, sliced
- Lime wedges for serving
Instructions
Step 1: Prepare the Chicken
- In a small bowl, mix chili powder, garlic powder, cumin, smoked paprika, salt, and pepper.
- Rub the spice mixture onto both sides of the chicken.
- Heat olive oil in a pan over medium heat. Cook the chicken for 6-7 minutes per side or until fully cooked.
- Remove from heat and let rest for 5 minutes before slicing.
Step 2: Make the Street Corn Mixture
- If using fresh corn, grill or pan-roast the kernels until slightly charred.
- In a bowl, mix mayonnaise, sour cream, lime juice, and chili powder.
- Stir in the charred corn, cotija cheese, and chopped cilantro.
Step 3: Assemble the Rice Bowl
- Place cooked rice in serving bowls.
- Top with black beans, diced tomatoes, red onion, and sliced avocado.
- Add sliced chicken and the street corn mixture.
