- 1 tablespoon olive oil
- 1/2 tablespoon butter (for cooking)
Instructions
- Prepare the Filling:
- Heat olive oil in a skillet over medium heat.
- Add minced garlic and cook for 30 seconds until fragrant.
- Stir in chopped spinach and cook until wilted, about 2-3 minutes.
- Remove from heat and mix in crumbled feta, shredded mozzarella, oregano, and red pepper flakes.
- Assemble the Quesadillas:
- Lay a tortilla flat and spread half of the spinach-feta mixture over one side.
- Fold the tortilla in half, pressing gently. Repeat with the remaining tortillas.
- Cook the Quesadillas:
- Heat a non-stick skillet over medium heat and add butter.
- Place a quesadilla in the pan and cook for 2-3 minutes per side, until golden brown and crispy.
- Repeat with remaining quesadillas.
- Serve and Enjoy:
- Slice into wedges and serve immediately with tzatziki, sour cream, or a fresh salad.
