- 1/2 cup whole milk or half-and-half
- 1 tsp smoked paprika
- 1/2 tsp ground cumin
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- Salt & pepper to taste
- Optional: 1/4 cup diced jalapeños for extra heat
Instructions
- In a large cast iron skillet, combine softened cream cheese, shredded cheddar, Monterey Jack, and diced tomatoes with green chilies.
- Sprinkle in smoked paprika, cumin, garlic powder, onion powder, salt, and pepper. Add jalapeños if desired.
- Preheat smoker or grill to 225°F (107°C). Smoke the queso for 45-60 minutes, stirring occasionally.
- Once melted and bubbly, stir in milk or half-and-half for desired consistency. Serve immediately.
