  • 8 oz cream cheese, softened
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 can (10 oz) diced tomatoes with green chilies (Rotel)
  • 1/2 cup whole milk or half-and-half
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt & pepper to taste
  • Optional: 1/4 cup diced jalapeños for extra heat

Instructions

  1. In a large cast iron skillet, combine softened cream cheese, shredded cheddar, Monterey Jack, and diced tomatoes with green chilies.
  2. Sprinkle in smoked paprika, cumin, garlic powder, onion powder, salt, and pepper. Add jalapeños if desired.
  3. Preheat smoker or grill to 225°F (107°C). Smoke the queso for 45-60 minutes, stirring occasionally.
  4. Once melted and bubbly, stir in milk or half-and-half for desired consistency. Serve immediately.
