  • Yield: 4-6 servings 1x

Description

Tender beef bites and baby potatoes in a rich garlic butter sauce make this slow cooker dish a comforting, easy-to-prepare meal. Perfect for weeknights or family dinners, it delivers bold, savory flavors with minimal effort.

Ingredients

Scale
  • 2 lbs beef chuck roast or stew meat, cut into bite-sized pieces
  • 1.5 lbs baby potatoes, halved or quartered
  • 4 tbsp unsalted butter
  • 4 cloves fresh garlic, minced
  • 2 tbsp fresh parsley, chopped (plus extra for garnish)
  • 1 tsp fresh thyme leaves
  • 2 sprigs fresh rosemary
  • 1 cup beef broth
  • 2 tbsp olive oil
  • 1.5 tsp salt (adjust to taste)
  • 1 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp paprika

Instructions

  • Prepare the Ingredients
    • Trim excess fat from the beef and cut into bite-sized pieces. Wash and halve the baby potatoes.
  • Season the Beef
    • Place beef in a large bowl. Drizzle with olive oil and season with salt, pepper, onion powder, and paprika. Toss to coat evenly.
  • Sear the Beef (Optional)
    • Heat a skillet over medium-high heat. Sear the beef bites on all sides until browned for enhanced flavor.
  • Layer Ingredients
    • Add potatoes to the bottom of the slow cooker. Layer seared beef on top.
  • Prepare Garlic Butter Sauce
    • In a small saucepan, melt butter over medium heat. Add garlic, thyme, and rosemary. Cook for 1–2 minutes until fragrant.
  • Pour and Add Broth
    • Pour garlic butter sauce over the beef and potatoes. Add beef broth, ensuring the liquid partially submerges the ingredients.
  • Cook
    • Cover and cook on low for 6–8 hours or high for 3–4 hours, until beef is tender and potatoes are fork-soft.
  • Garnish and Serve
    • Sprinkle with fresh parsley before serving. Serve hot.

Notes

  • Variations:
    • Substitute beef with chicken thighs or pork shoulder.
    • Use Yukon gold, red, or sweet potatoes.
    • Add carrots, mushrooms, or green beans for more vegetables.
    • Adjust spices by adding red pepper flakes or cayenne for heat.
  • Storage & Reheating:
    • Refrigerate leftovers in an airtight container for up to 4 days.
    • Freeze for up to 3 months; thaw overnight in the fridge before reheating.
