- 2 lbs beef stew meat, cut into bite-sized chunks
- 1.5 lbs baby potatoes, halved
- 4 tbsp unsalted butter, melted
- 5 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp paprika
- 1/2 tsp crushed red pepper flakes (optional)
- 1 cup beef broth
- 2 tbsp Worcestershire sauce
- 1 tbsp soy sauce
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Prepare the Ingredients
- Pat the beef chunks dry with paper towels.
- Cut baby potatoes in half for even cooking.
- Brown the Beef (Optional but Recommended)
- In a skillet over medium-high heat, sear the beef for 2-3 minutes per side until browned.
- Assemble in the Slow Cooker
- Place potatoes at the bottom, followed by beef.
- Make the Garlic Butter Sauce
- Mix melted butter, garlic, salt, pepper, oregano, thyme, paprika, and red pepper flakes.
- Pour over beef and potatoes.
- Add Liquids
- Pour in beef broth, Worcestershire sauce, and soy sauce.
- Cook Low and Slow
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Garnish and Serve
- Sprinkle fresh parsley before serving.
