- 2 lbs beef stew meat (or sirloin, cut into bite-sized pieces)
- 1.5 lbs baby potatoes, halved
- 4 tbsp unsalted butter, melted
- 4 cloves garlic, minced
- 1 cup beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp smoked paprika
- 1/2 tsp onion powder
- 1/2 tsp salt (or to taste)
- 1/2 tsp black pepper
- 1/2 tsp crushed red pepper flakes (optional)
- 1 tbsp olive oil
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Sear the Beef (Optional but Recommended)
- Heat olive oil in a skillet over medium-high heat.
- Sear beef bites for 2-3 minutes per side until browned.
- Transfer to the slow cooker.
- Prepare the Garlic Butter Mixture
- In a small bowl, mix melted butter, minced garlic, Worcestershire sauce, thyme, rosemary, paprika, onion powder, salt, pepper, and red pepper flakes.
- Combine Ingredients in the Slow Cooker
- Add halved baby potatoes and seared beef.
- Pour the garlic butter mixture over everything.
- Add beef broth.
- Slow Cook
- Cover and cook on low for 6-8 hours or high for 3-4 hours, until beef is tender and potatoes are fork-soft.
- Garnish and Serve
- Sprinkle fresh parsley over the dish.
- Serve hot with crusty bread, rice, or roasted vegetables.
