Instructions

. Prepare the Chicken

  • Slice large chicken breasts in half horizontally to create thinner cutlets.
  • Season both sides with salt, black pepper, garlic powder, onion powder, and paprika.

2. Sear the Chicken

  • Heat olive oil in a large skillet over medium-high heat.
  • Add chicken and cook for 4-5 minutes per side until golden brown and cooked through.
  • Transfer to a plate and tent with foil to keep warm.

3. Sauté the Mushrooms

  • In the same skillet, add butter and sliced mushrooms.
  • Cook for about 4-5 minutes until softened and browned.
  • Stir in the minced garlic and cook for another 30 seconds.

4. Make the Asiago Cream Sauce

  • Pour in the chicken broth and scrape up any browned bits from the pan.
  • Lower the heat to medium and add heavy cream, stirring to combine.
  • Mix in the grated Asiago cheese, thyme, and red pepper flakes (if using).
  • Let the sauce simmer for 2-3 minutes until thickened.

5. Combine and Serve

  • Return the chicken to the skillet, coating it in the sauce.
  • Let it simmer for 2-3 minutes so the flavors meld.
