  • 2 cups glutinous rice (malagkit rice)
  • 4 cups water
  • 2 cups coconut milk
  • 1 ½ cups brown sugar
  • ½ teaspoon salt
  • Optional: Latik (coconut milk curds) for topping

Instructions

Step 1: Cook the Glutinous Rice

  1. Rinse glutinous rice under running water until the water runs clear.
  2. In a pot, combine rice and water; bring to a boil.
  3. Lower the heat, cover, and let simmer for 15–20 minutes until fully cooked and water is absorbed.

Step 2: Prepare the Coconut Caramel Mixture

  1. In a separate pan, combine coconut milk, brown sugar, and salt.
  2. Cook over medium heat, stirring constantly, until slightly thickened and caramel-like (about 10–15 minutes).

Step 3: Combine Rice and Caramel

  1. Add cooked glutinous rice to the coconut caramel mixture.
  2. Stir continuously until evenly coated and sticky, about 10 minutes.

Step 4: Transfer and Serve

  1. Transfer Biko to a greased dish or banana leaf-lined tray.
  2. Flatten and smooth the top using a spatula.
  3. Optional: Top with latik for extra flavor.
  4. Allow to cool before slicing and serving.

Notes

  • Ube Biko – Add ube halaya (purple yam jam) for a unique twist.
  • Jackfruit Biko – Mix in sweetened jackfruit strips for extra flavor.
