- 2 cups glutinous rice (malagkit rice)
- 4 cups water
- 2 cups coconut milk
- 1 ½ cups brown sugar
- ½ teaspoon salt
- Optional: Latik (coconut milk curds) for topping
Instructions
Step 1: Cook the Glutinous Rice
- Rinse glutinous rice under running water until the water runs clear.
- In a pot, combine rice and water; bring to a boil.
- Lower the heat, cover, and let simmer for 15–20 minutes until fully cooked and water is absorbed.
Step 2: Prepare the Coconut Caramel Mixture
- In a separate pan, combine coconut milk, brown sugar, and salt.
- Cook over medium heat, stirring constantly, until slightly thickened and caramel-like (about 10–15 minutes).
Step 3: Combine Rice and Caramel
- Add cooked glutinous rice to the coconut caramel mixture.
- Stir continuously until evenly coated and sticky, about 10 minutes.
Step 4: Transfer and Serve
- Transfer Biko to a greased dish or banana leaf-lined tray.
- Flatten and smooth the top using a spatula.
- Optional: Top with latik for extra flavor.
- Allow to cool before slicing and serving.
Notes
- Ube Biko – Add ube halaya (purple yam jam) for a unique twist.
- Jackfruit Biko – Mix in sweetened jackfruit strips for extra flavor.
- Toasted Coconut – Sprinkle toasted desiccated coconut for added texture.
