Instructions
- Cook the Meat
- In a large pot or Dutch oven, heat olive oil over medium heat.
- Add the ground lamb or beef and cook until browned, breaking it up with a spoon. Drain excess fat if needed.
- Sauté the Vegetables
- Add diced onion, carrots, and celery to the pot. Cook for 5–7 minutes until softened.
- Stir in garlic, salt, pepper, thyme, and rosemary. Cook for another minute.
- Build the Soup Base
- Stir in the tomato paste and cook for 1 minute to enhance the flavor.
- Pour in the beef broth and Worcestershire sauce. Bring to a simmer.
- Add frozen peas and corn (if using) and cook for another 10 minutes.
- Prepare the Mashed Potato Topping
- If not already prepared, make mashed potatoes by mashing boiled potatoes with butter, cream, and salt.
- Finish and Serve
- Stir in the heavy cream or milk to make the soup creamier. Adjust seasoning if needed.
- Spoon mashed potatoes over the soup or stir them in for a thicker consistency.
- Garnish with chopped parsley and serve warm.
