Instructions

  1. Cook the Meat
    • In a large pot or Dutch oven, heat olive oil over medium heat.
    • Add the ground lamb or beef and cook until browned, breaking it up with a spoon. Drain excess fat if needed.
  2. Sauté the Vegetables
    • Add diced onion, carrots, and celery to the pot. Cook for 5–7 minutes until softened.
    • Stir in garlic, salt, pepper, thyme, and rosemary. Cook for another minute.
  3. Build the Soup Base
    • Stir in the tomato paste and cook for 1 minute to enhance the flavor.
    • Pour in the beef broth and Worcestershire sauce. Bring to a simmer.
    • Add frozen peas and corn (if using) and cook for another 10 minutes.
  4. Prepare the Mashed Potato Topping
    • If not already prepared, make mashed potatoes by mashing boiled potatoes with butter, cream, and salt.
  5. Finish and Serve
    • Stir in the heavy cream or milk to make the soup creamier. Adjust seasoning if needed.
