- 1 cup cooked breakfast sausage, crumbled
- 1 cup shredded cheddar cheese
- 1 cup bell peppers, diced (red, yellow, or green)
- 1/2 cup onion, finely chopped
- 1 cup frozen hash browns, thawed
- 8 small flour tortillas
- 2 tablespoons olive oil
- Optional toppings: salsa, avocado, hot sauce, sour cream
Instructions
- Preheat Oven & Prepare Pan
- Preheat oven to 375°F (190°C) and grease a large sheet pan or line with parchment paper.
- Whisk the Eggs
- In a mixing bowl, whisk eggs, milk, salt, pepper, garlic powder, onion powder, and smoked paprika until well combined.
- Assemble Ingredients on the Sheet Pan
- Spread cooked sausage, diced bell peppers, onions, and hash browns evenly on the sheet pan.
- Pour egg mixture over the ingredients and sprinkle shredded cheese on top.
- Bake
- Bake for 20-25 minutes until eggs are fully set and edges are golden.
- Slice & Assemble Burritos
- Let the egg mixture cool slightly, then slice into 8 portions.
- Warm tortillas, place a portion in each, and roll tightly into burritos.
