  • 1 cup cooked breakfast sausage, crumbled
  • 1 cup shredded cheddar cheese
  • 1 cup bell peppers, diced (red, yellow, or green)
  • 1/2 cup onion, finely chopped
  • 1 cup frozen hash browns, thawed
  • 8 small flour tortillas
  • 2 tablespoons olive oil
  • Optional toppings: salsa, avocado, hot sauce, sour cream

Instructions

  1. Preheat Oven & Prepare Pan
    • Preheat oven to 375°F (190°C) and grease a large sheet pan or line with parchment paper.
  2. Whisk the Eggs
    • In a mixing bowl, whisk eggs, milk, salt, pepper, garlic powder, onion powder, and smoked paprika until well combined.
  3. Assemble Ingredients on the Sheet Pan
    • Spread cooked sausage, diced bell peppers, onions, and hash browns evenly on the sheet pan.
    • Pour egg mixture over the ingredients and sprinkle shredded cheese on top.
  4. Bake
    • Bake for 20-25 minutes until eggs are fully set and edges are golden.
