A quick and easy one-pan sautéed chicken dish with creamy spinach, crispy bacon, and mushrooms. Perfect for a low-carb, gluten-free, or comforting dinner option.

- 2 chicken breasts, cut into strips or cubes
- Salt and pepper, to taste
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 2 tablespoons olive oil
- 4 slices bacon, chopped
- 1 cup mushrooms, sliced
- 2 cloves garlic, minced
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 3 cups fresh spinach
- ½ teaspoon nutmeg (optional)
Instructions
1. Prepare the Chicken
- Season chicken with salt, pepper, garlic powder, and paprika.
- Heat a large skillet over medium-high heat with 1 tablespoon olive oil.
- Cook chicken until golden brown and fully cooked, about 5-7 minutes. Remove and set aside.
2. Cook the Bacon & Mushrooms
- In the same skillet, cook chopped bacon until crispy. Remove bacon and leave the fat in the pan.
- Add mushrooms and sauté until golden and tender.
3. Make the Creamy Sauce
- Add minced garlic to the mushrooms and sauté for 30 seconds.
- Pour in heavy cream and Parmesan cheese. Stir well and let the sauce thicken slightly over medium heat.
4. Add Spinach & Chicken
- Stir in fresh spinach until wilted.
- Return the cooked chicken and crispy bacon to the pan.
- Cook for 2-3 minutes. Add a pinch of nutmeg for extra flavor, if desired.
5. Serve & Enjoy
- Serve warm with rice, pasta, mashed potatoes, or enjoy on its own for a low-carb option.
