  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp red pepper flakes (optional, for heat)
  • 1 cup chicken broth (or water)
  • 2 cups cooked white or brown rice
  • Fresh parsley for garnish (optional)

Instructions

  1. Prepare the Ingredients
    • Slice the sausage into rounds and set aside. Cut the onion and bell peppers into thin strips. Mince the garlic.
  2. Cook the Sausage
    • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced sausage and cook for about 5 minutes, stirring occasionally, until browned. Remove from the pan and set aside.
  3. Sauté the Vegetables
    • In the same skillet, add the remaining tablespoon of olive oil. Add the sliced onions and bell peppers. Cook for about 5–7 minutes, stirring occasionally, until they begin to soften. Add the minced garlic, smoked paprika, oregano, salt, black pepper, and red pepper flakes (if using). Stir well and cook for another 1–2 minutes.
  4. Combine and Simmer
    • Return the cooked sausage to the skillet. Pour in the chicken broth and stir to combine. Lower the heat and let everything simmer for about 5 minutes, allowing the flavors to meld together and the broth to slightly reduce.
  5. Serve
    • Spoon the sausage, onions, and peppers over a bed of warm rice. Garnish with fresh parsley if desired. Serve immediately.
