Instructions

  1. Prepare the Pork Chops:
    • Mix salt, black pepper, garlic powder, onion powder, and smoked paprika in a small bowl.
    • Rub the seasoning evenly over both sides of the pork chops.
    • Let the pork chops sit at room temperature for 15 minutes.
  2. Sear the Pork Chops:
    • Heat olive oil in a large skillet over medium-high heat.
    • Add the pork chops and sear for 4-5 minutes on each side until golden brown.
    • Reduce heat to medium, add butter, and baste the pork chops.
    • Cook until the internal temperature reaches 145°F (63°C). Remove from the skillet and let rest for 5 minutes.
  3. Make the Peppercorn Sauce:
    • In the same skillet, melt butter over medium heat.
    • Add flour and whisk for 1 minute until lightly golden.
    • Slowly add heavy cream while stirring continuously.
    • Stir in Worcestershire sauce, Dijon mustard, and crushed black peppercorns.
    • Simmer for 2-3 minutes until thickened. Season with salt to taste.
  4. Serve:
