- 2 tablespoons butter
- 1 tablespoon all-purpose flour
- 1 cup heavy cream
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1 tablespoon crushed black peppercorns
- Salt to taste

- Prepare the Pork Chops:
- Mix salt, black pepper, garlic powder, onion powder, and smoked paprika in a small bowl.
- Rub the seasoning evenly over both sides of the pork chops.
- Let the pork chops sit at room temperature for 15 minutes.
- Sear the Pork Chops:
- Heat olive oil in a large skillet over medium-high heat.
- Add the pork chops and sear for 4-5 minutes on each side until golden brown.
- Reduce heat to medium, add butter, and baste the pork chops.
- Cook until the internal temperature reaches 145°F (63°C). Remove from the skillet and let rest for 5 minutes.
- Make the Peppercorn Sauce:
- In the same skillet, melt butter over medium heat.
- Add flour and whisk for 1 minute until lightly golden.
- Slowly add heavy cream while stirring continuously.
- Stir in Worcestershire sauce, Dijon mustard, and crushed black peppercorns.
- Simmer for 2-3 minutes until thickened. Season with salt to taste.
- Serve:
- Place the pork chops on a plate and generously spoon the peppercorn sauce over the top.
- Serve with mashed potatoes, steamed vegetables, or a fresh side salad.
