- 2 lbs red potatoes, washed and cut into quarters
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried rosemary (or fresh, chopped)
- ½ teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon red pepper flakes (optional, for heat)
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat & Prep: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- Cut & Season: Wash and quarter the red potatoes. Toss in a bowl with olive oil, garlic powder, onion powder, rosemary, paprika, salt, black pepper, and red pepper flakes.
- Arrange for Roasting: Spread potatoes in a single layer on the baking sheet, ensuring they are not overcrowded.
- Roast: Bake for 35–40 minutes, flipping halfway, until golden brown and crispy.
- Garnish & Serve: Sprinkle with fresh parsley before serving warm.

- For Extra Crispiness: Avoid overcrowding the pan and roast at a high temperature.
- Storage: Keep leftovers in an airtight container in the fridge for up to 4 days.
- Reheating: Warm in an oven at 375°F (190°C) for 10 minutes or in an air fryer at 350°F (175°C) for 5 minutes.
