Ingredients

Scale

For the Dip:

  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 1/2 cups shredded Swiss cheese
  • 1 cup cooked corned beef, chopped
  • 1 cup sauerkraut, drained and patted dry
  • 1/2 cup Thousand Island dressing
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper

For the Bread Bowl & Dippers:

  • 1 large round rye bread loaf
  • Rye crackers, pretzels, or additional rye bread for dipping

Instructions

Step 1: Prepare the Bread Bowl

  1. Preheat the oven to 375°F (190°C).
  2. Cut off the top of the rye bread loaf and scoop out the center, leaving about a 1-inch thick shell. Reserve the bread pieces for dipping.

Step 2: Make the Dip

  1. In a large bowl, mix the cream cheese, sour cream, and Thousand Island dressing until smooth.
  2. Stir in the Swiss cheese, corned beef, sauerkraut, Worcestershire sauce, garlic powder, onion powder, and black pepper until well combined.

Step 3: Bake the Dip

  1. Spoon the dip mixture into the hollowed-out bread bowl.
  2. Wrap the bread bowl loosely in aluminum foil and place it on a baking sheet.
  3. Bake for 25-30 minutes, until hot and bubbly.
  4. Remove the foil and bake for an additional 5 minutes to crisp up the bread.

Step 4: Serve

  1. Place the bread bowl on a serving platter and arrange the reserved bread chunks, crackers, or pretzels around it.
  2. Serve warm and enjoy!

Notes

  • Spicy Reuben Dip: Add a teaspoon of horseradish or a few dashes of hot sauce.
  • Lighter Version: Use reduced-fat cream cheese, light sour cream, and low-fat Swiss cheese.
  • Slow Cooker Method: Combine all dip ingredients in a slow cooker and heat on low for 2 hours, stirring occasionally. Transfer to a bread bowl before serving.
