  • 1 bunch turnip greens, washed and chopped
  • 1 bunch collard greens, washed and chopped
  • 2 tablespoons olive oil or bacon grease
  • ½ onion, finely chopped
  • 2 cloves garlic, minced
  • ½ teaspoon red pepper flakes (optional)
  • 4 cups chicken broth or vegetable broth
  • ½ teaspoon salt (or to taste)
  • ½ teaspoon black pepper
  • 1 tablespoon apple cider vinegar
  • ¼ teaspoon smoked paprika (optional)
  • ½ cup diced smoked turkey or ham (optional)

Instructions

1. Prepare the Greens

  • Wash both the turnip and collard greens thoroughly to remove any dirt or grit.
  • Trim the tough stems from the collard greens and roughly chop both greens into bite-sized pieces.

2. Sauté the Aromatics

  • In a large pot or skillet, heat the olive oil or bacon grease over medium heat.
  • Add the chopped onion and sauté for about 3 minutes, until softened.
  • Stir in the garlic and red pepper flakes, cooking for another 30 seconds until fragrant.

3. Add the Broth and Greens

  • Pour in the broth and bring to a simmer.
  • Add the collard greens first, as they take longer to cook. Stir well, then cover and cook for 5 minutes.
  • Add the turnip greens, salt, black pepper, and smoked paprika (if using). Stir again, then cover and cook for another 5–7 minutes, until the greens are tender but still vibrant.

4. Finish and Serve

  • Stir in the apple cider vinegar for a bit of brightness. Taste and adjust seasoning as needed.
  • If using smoked turkey or ham, add it in the last few minutes of cooking.
  • Serve hot, with a side of cornbread or your favorite main dish.

  • Vegetarian/Vegan Option – Use vegetable broth and skip the smoked meat. Add a splash of liquid smoke for depth.
