Description

  • 1 cup sourdough discard
  • 1 ½ cups all-purpose flour
  • 1 teaspoon instant yeast
  • ½ teaspoon salt
  • 1 teaspoon sugar
  • ¼ cup warm water (as needed)
  • 2 tablespoons olive oil

For the Garlic Butter Topping:

  • 3 tablespoons unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • ¼ teaspoon salt
  • ¼ teaspoon red pepper flakes (optional)
  • ¼ cup grated Parmesan (optional)

Instructions

Step 1: Prepare the Dough

  1. In a large mixing bowl, combine sourdough discard, flour, yeast, salt, sugar, and olive oil.
  2. Gradually add warm water while mixing until a soft, slightly sticky dough forms.
  3. Knead for about 5 minutes until smooth and elastic. Cover and let rest for 30-45 minutes, or until slightly puffy.

Step 2: Shape the Knots

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Divide the dough into 8 equal pieces. Roll each into a 6-inch rope.
  3. Tie each rope into a loose knot and place them on the baking sheet.
  4. Let them rest for 10-15 minutes while the oven heats.

Step 3: Bake

  1. Bake for 15-18 minutes, or until golden brown and firm to the touch.

Step 4: Make the Garlic Butter

  1. While the knots bake, mix melted butter, garlic, parsley, salt, and red pepper flakes in a small bowl.

Step 5: Finish and Serve

  1. Brush the warm knots with the garlic butter mixture. Sprinkle with Parmesan if using.
  2. Serve warm and enjoy!
