For the Dough:
- 1 cup sourdough discard
- 1 ½ cups all-purpose flour
- 1 teaspoon instant yeast
- ½ teaspoon salt
- 1 teaspoon sugar
- ¼ cup warm water (as needed)
- 2 tablespoons olive oil
For the Garlic Butter Topping:
- 3 tablespoons unsalted butter, melted
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- ¼ teaspoon salt
- ¼ teaspoon red pepper flakes (optional)
- ¼ cup grated Parmesan (optional)
Instructions
Step 1: Prepare the Dough
- In a large mixing bowl, combine sourdough discard, flour, yeast, salt, sugar, and olive oil.
- Gradually add warm water while mixing until a soft, slightly sticky dough forms.
- Knead for about 5 minutes until smooth and elastic. Cover and let rest for 30-45 minutes, or until slightly puffy.
Step 2: Shape the Knots
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Divide the dough into 8 equal pieces. Roll each into a 6-inch rope.
- Tie each rope into a loose knot and place them on the baking sheet.
- Let them rest for 10-15 minutes while the oven heats.
Step 3: Bake
- Bake for 15-18 minutes, or until golden brown and firm to the touch.
Step 4: Make the Garlic Butter
- While the knots bake, mix melted butter, garlic, parsley, salt, and red pepper flakes in a small bowl.
Step 5: Finish and Serve
- Brush the warm knots with the garlic butter mixture. Sprinkle with Parmesan if using.
- Serve warm and enjoy!
