For the pork chops:
- 4 bone-in or boneless pork chops (¾ to 1 inch thick)
- 1 teaspoon salt
- ½ teaspoon black pepper

- 1 tablespoon olive oil
For the scalloped potatoes:
- 4 large russet potatoes, thinly sliced
- 1 small onion, thinly sliced
- 2 cups shredded cheddar cheese
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 ½ cups milk (whole or 2%)
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon garlic powder
- ½ teaspoon dried thyme (optional)
Instructions
- Prepare the Ingredients
- Preheat oven to 375°F (190°C).
- Lightly grease a 9×13-inch baking dish.
- Make the Cheese Sauce
- Melt butter in a saucepan over medium heat.
- Stir in flour and cook for about 1 minute, whisking constantly.
- Gradually whisk in milk, cooking until slightly thickened.
- Stir in salt, pepper, garlic powder, and thyme.
- Remove from heat and mix in 1 ½ cups shredded cheddar cheese until smooth.
- Assemble the Scalloped Potatoes
- Layer half of the sliced potatoes in the baking dish.
- Sprinkle half of the onions on top.
- Pour half of the cheese sauce over the potatoes.
- Repeat layers with remaining potatoes, onions, and sauce.
- Season and Sear the Pork Chops
- Pat pork chops dry.
- Rub with salt, pepper, garlic powder, onion powder, and paprika.
- Heat olive oil in a skillet over medium-high heat and sear pork chops for 2-3 minutes per side until browned.
- Bake the Dish
- Arrange seared pork chops on top of the scalloped potatoes.
- Cover with foil and bake for 45 minutes.
- Remove foil, sprinkle remaining ½ cup cheddar cheese on top, and bake uncovered for another 15 minutes.
- Ensure pork reaches an internal temperature of 145°F (63°C).
- Rest and Serve
- Let rest for 5 minutes before serving.
- Garnish with parsley or chives if desired.
