  • Total Time: 30 minutes
  • Yield: 6 servings 1x

Description

Make Ina Garten’s Perfect Shrimp Scampi with tender shrimp, garlic, lemon, and linguine in a flavorful, buttery sauce. Quick, easy, and perfect for any occasion!

Ingredients

Scale
  • pounds linguine
  • 6 tablespoons unsalted butter
  • 5 tablespoons olive oil
  • 3 tablespoons minced garlic (about 9 cloves)
  • 2 pounds large shrimp, peeled and deveined
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ¾ cup chopped fresh parsley
  • Zest of 1 lemon
  • ½ cup freshly squeezed lemon juice (from about 4 lemons)
  • ½ lemon, thinly sliced into half-rounds
  • ¼ teaspoon crushed red pepper flakes

Instructions

Step 1: Cook the Pasta

Bring a large pot of salted water to a boil. Cook the linguine according to package instructions until al dente. Drain and set aside.

Step 2: Sauté the Garlic

In a large (12-inch) heavy-bottomed pan, heat the butter and olive oil over medium-low heat. Add minced garlic and sauté for about 1 minute, stirring frequently to prevent burning.

Step 3: Cook the Shrimp

Add the shrimp to the pan. Season with salt and black pepper. Cook for about 5 minutes, stirring frequently, until shrimp are pink and opaque.

Step 4: Add Flavor

Remove the pan from heat. Stir in parsley, lemon zest, lemon juice, lemon slices, and crushed red pepper flakes. Mix well.

Step 5: Combine with Pasta

Add the cooked linguine to the pan. Toss thoroughly to coat the pasta in the garlic butter sauce.

Step 6: Serve and Enjoy

Serve hot with extra parsley and lemon wedges if desired.

Notes

  • Make It Creamy: Stir in ½ cup of heavy cream for a rich, creamy version.
  • Add White Wine: Deglaze the pan with ½ cup of dry white wine for extra depth of flavor.
  • Use Different Pasta: Swap linguine for spaghetti, fettuccine, or angel hair pasta.
  • Spice It Up: Increase red pepper flakes or add cayenne pepper for extra heat.
  • Include Veggies: Toss in spinach, cherry tomatoes, or asparagus for added freshness.
