An easy, one-pot beef and cheddar ranch pasta that’s packed with flavor and ready in under 30 minutes. Made with seasoned ground beef, creamy cheddar cheese, and zesty ranch seasoning, this dish is perfect for a quick and comforting family meal with minimal cleanup.
Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 cup milk
- 8 oz elbow macaroni (or preferred pasta shape)
- 1 packet (1 oz) ranch seasoning mix
- 1 can (10 oz) diced tomatoes with green chilies (optional)
- 2 cups shredded cheddar cheese
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt (adjust to taste)
- 1/2 teaspoon smoked paprika (optional)
- 1/2 teaspoon dried parsley (for garnish)
Instructions
Step 1: Cook the Beef
In a large pot or deep skillet over medium-high heat, cook the ground beef until browned, breaking it apart as it cooks. Drain excess fat if necessary.
Step 2: Sauté Aromatics
Add the diced onion and minced garlic to the beef. Cook for 2-3 minutes until the onion softens and becomes translucent.
Step 3: Add Liquids and Seasoning
Pour in the beef broth and milk, then stir in the ranch seasoning, black pepper, salt, smoked paprika, and diced tomatoes (if using). Mix well to combine.
Step 4: Cook the Pasta
Add the uncooked pasta to the pot, stirring to ensure it is submerged in the liquid. Bring to a gentle boil, then reduce the heat to low. Cover and let simmer for about 12-15 minutes, stirring occasionally, until the pasta is tender and has absorbed most of the liquid.
Step 5: Add Cheese and Serve
Once the pasta is cooked, remove from heat and stir in the shredded cheddar cheese until melted and creamy. Garnish with dried parsley and serve immediately.
Notes
- Protein Swap: Use ground turkey or chicken instead of beef for a leaner option.
- Extra Creaminess: Stir in 2 tablespoons of cream cheese or a splash of heavy cream before serving.
- Spice It Up: Add red pepper flakes or chopped jalapeños for a bit of heat.
- Vegetable Boost: Mix in spinach, bell peppers, or mushrooms for extra nutrition.
