Instructions

  1. Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add diced chicken, season with salt, pepper, and half of the chili powder and cumin. Cook for 4-5 minutes until browned on all sides. Remove from the pan and set aside.
  2. Sauté the Aromatics: In the same pan, add diced onion and cook for 2-3 minutes until softened. Stir in minced garlic and cook for another 30 seconds.
  3. Cook the Rice and Vegetables: Add uncooked rice, remaining chili powder, cumin, paprika, and chicken broth. Stir well, then add diced tomatoes, black beans, and corn. Mix thoroughly.
  4. Simmer Until Done: Return the cooked chicken to the pan. Cover and let simmer for 15-18 minutes, stirring occasionally, until rice is fully cooked and liquid is absorbed.
  5. Add Cheese and Serve: Sprinkle shredded cheese over the top, cover, and let melt for 1-2 minutes. Squeeze fresh lime juice over the dish and garnish with chopped cilantro.
