- 2 medium sweet potatoes, peeled and diced
- 2 tbsp olive oil
- 4 boneless, skinless chicken thighs (or breasts)

- 1 tsp garlic powder
- 1/2 tsp onion powder

- Salt and black pepper, to taste
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 1 zucchini, sliced into half-moons
- 1 cup fresh spinach (optional)
- 1/4 cup chicken broth or water (as needed)
- Juice of 1/2 lemon
- Fresh parsley, chopped (for garnish)
Instructions
- Prepare Ingredients
- Dice the sweet potatoes into small cubes.
- Season the chicken with paprika, garlic powder, onion powder, cumin, salt, and pepper.
- Sear Chicken
- Heat 1 tbsp olive oil in a large skillet over medium-high heat.
- Sear chicken for 3–4 minutes per side until golden. Remove and set aside.
- Cook Sweet Potatoes
- In the same skillet, heat the remaining olive oil.
- Add sweet potatoes and cook for 5–7 minutes, stirring occasionally.
- Add Vegetables
- Add onion, garlic, red bell pepper, and zucchini to the skillet.
- Cook for 3–4 minutes until tender.
- Combine and Simmer
- Return chicken to the skillet. Add chicken broth or water.
- Cover and simmer for 10–15 minutes until chicken reaches 165°F and sweet potatoes are tender.
- Finish and Serve
- Stir in spinach in the last 2–3 minutes of cooking.
- Add lemon juice and garnish with parsley. Serve hot.
