  • 1/2 cup chicken broth
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Prepare Ingredients: Chop the chicken into bite-sized pieces, dice the sweet potatoes, and prepare the vegetables.
  2. Sauté the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook for about 5–7 minutes until browned. Remove from the skillet and set aside.
  3. Cook the Vegetables: In the same skillet, add the remaining olive oil and sauté the onion, garlic, and red bell pepper for 2–3 minutes until softened.
  4. Add the Sweet Potatoes: Stir in the diced sweet potatoes along with paprika, cumin, chili powder, and red pepper flakes (if using). Cook for another 5 minutes, stirring occasionally.
  5. Combine Chicken and Broth: Return the chicken to the skillet and pour in the chicken broth. Cover and let simmer for 10–12 minutes until the sweet potatoes are tender and the chicken is fully cooked.
  6. Finish and Serve: Remove from heat, sprinkle with fresh parsley, and serve hot.
