Old-Fashioned Pimento Cheese

  • Total Time: 40 minutes
  • Yield: About 2 ½ cups 1x

Description

Old-fashioned pimento cheese is a creamy, tangy Southern classic made with sharp cheddar, mayonnaise, and pimentos. Perfect as a dip, spread, or sandwich filling—easy, flavorful, and crowd-pleasing!

Ingredients

Scale
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup mild cheddar cheese, shredded
  • ½ cup mayonnaise (Duke’s or Hellmann’s recommended)
  • 4 oz jar of diced pimentos, drained
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon cayenne pepper (optional, for heat)
  • ½ teaspoon Worcestershire sauce
  • Salt and black pepper, to taste

Instructions

  • Prepare the Ingredients – Shred the cheddar cheeses using a box grater for the best texture. Avoid pre-shredded cheese, as it contains anti-caking agents that affect creaminess.
  • Mix the Base – In a medium mixing bowl, combine mayonnaise, garlic powder, onion powder, cayenne pepper (if using), Worcestershire sauce, salt, and black pepper. Stir well.
  • Incorporate the Cheese – Fold in the shredded cheddar cheeses and drained pimentos, stirring until everything is well combined.
  • Adjust the Consistency – If the mixture is too thick, add a tablespoon of mayonnaise at a time until the desired consistency is reached.
  • Chill and Serve – Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld. Serve chilled or at room temperature with crackers, toast, or fresh vegetables.

Notes

  • Spicy Pimento Cheese – Add diced jalapeños or a dash of hot sauce for extra heat.
  • Smoky Flavor – Use smoked cheddar cheese for a deeper, more complex taste.
  • Creamier Texture – Blend in 2 ounces of softened cream cheese for extra richness.
  • Healthier Option – Substitute Greek yogurt for some of the mayonnaise.
