No-Bake Peanut Butter Cheesecake Balls

  • Total Time: 45 minutes
  • Yield: 20 cheesecake balls 1x

Description

Indulge in these No-Bake Peanut Butter Cheesecake Balls—rich, creamy, and coated in chocolate. This easy, no-bake dessert is perfect for parties, meal prep, or gifting!

Ingredients

Scale
  • 8 oz cream cheese, softened
  • 1 cup peanut butter (creamy or crunchy)
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 ½ cups graham cracker crumbs (or crushed digestive biscuits)
  • 12 oz semi-sweet or milk chocolate, melted
  • 1 tablespoon coconut oil (optional, for smoother chocolate coating)
  • Crushed peanuts or sea salt (optional, for garnish)

Instructions

1. Prepare the Cheesecake Mixture

In a large mixing bowl, beat the softened cream cheese and peanut butter until smooth and well combined. Add the powdered sugar and vanilla extract, then mix until fully incorporated.

2. Form the Cheesecake Balls

Gradually fold in the graham cracker crumbs, stirring until the mixture reaches a moldable consistency. If it’s too sticky, chill it in the refrigerator for 15 minutes before shaping. Scoop out portions and roll them into 1-inch balls. Place them on a parchment-lined baking sheet.

3. Chill the Balls

Refrigerate for at least 30 minutes, or until firm. This step makes dipping easier and helps maintain their shape.

4. Melt the Chocolate

In a microwave-safe bowl, melt the chocolate in 30-second intervals, stirring between each until smooth. Add coconut oil for a shinier finish.

5. Coat in Chocolate

Using a fork or dipping tool, coat each cheesecake ball in the melted chocolate, allowing excess to drip off. Place them back onto the parchment paper.

6. Garnish and Set

While the chocolate is still wet, sprinkle crushed peanuts or a pinch of sea salt on top. Let the chocolate set at room temperature or refrigerate until firm.

7. Serve and Enjoy

Once the chocolate has hardened, your No-Bake Peanut Butter Cheesecake Balls are ready to enjoy!

Notes

  • White Chocolate Coating – Swap dark chocolate for white chocolate for a sweeter contrast.
  • Crunchy Peanut Butter – Adds a bit of texture for a different bite.
  • Oreo Crumbs Instead of Graham Crackers – For a chocolatey twist.
  • Almond or Cashew Butter – A great alternative for a different nutty flavor.
  • Drizzle with Caramel – Adds an extra layer of indulgence.
