- 1 lb ground beef (lean or extra lean)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup kalamata olives, sliced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/4 tsp red pepper flakes (optional, for heat)
- Juice of 1/2 lemon
- Salt and pepper to taste
- 1/4 cup feta cheese, crumbled (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Sauté the Aromatics – In a large skillet, heat olive oil over medium heat. Add diced onions and garlic, cooking until fragrant and translucent, about 2-3 minutes.
- Brown the Ground Beef – Add the ground beef, breaking it apart with a spatula. Cook until browned and fully cooked, about 5-7 minutes. Drain excess grease if needed.
- Add Vegetables & Spices – Stir in the red bell pepper, zucchini, and cherry tomatoes. Cook for 4-5 minutes until the vegetables soften.
- Season the Dish – Sprinkle in oregano, cumin, smoked paprika, red pepper flakes, salt, and pepper. Stir well to combine.
- Incorporate Olives & Lemon Juice – Add sliced kalamata olives and fresh lemon juice. Stir and cook for another 2 minutes.
- Finish & Serve – Remove from heat and top with crumbled feta cheese and fresh parsley. Serve warm over rice, quinoa, or with warm pita bread.
