  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup kalamata olives, sliced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp red pepper flakes (optional, for heat)
  • Juice of 1/2 lemon
  • Salt and pepper to taste
  • 1/4 cup feta cheese, crumbled (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Sauté the Aromatics – In a large skillet, heat olive oil over medium heat. Add diced onions and garlic, cooking until fragrant and translucent, about 2-3 minutes.
  2. Brown the Ground Beef – Add the ground beef, breaking it apart with a spatula. Cook until browned and fully cooked, about 5-7 minutes. Drain excess grease if needed.
  3. Add Vegetables & Spices – Stir in the red bell pepper, zucchini, and cherry tomatoes. Cook for 4-5 minutes until the vegetables soften.
  4. Season the Dish – Sprinkle in oregano, cumin, smoked paprika, red pepper flakes, salt, and pepper. Stir well to combine.
  5. Incorporate Olives & Lemon Juice – Add sliced kalamata olives and fresh lemon juice. Stir and cook for another 2 minutes.
  6. Finish & Serve – Remove from heat and top with crumbled feta cheese and fresh parsley. Serve warm over rice, quinoa, or with warm pita bread.
