Instructions
Step 1: Sear the Salmon
- Pat the salmon fillets dry and season with salt and black pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Place the salmon fillets skin-side down (if using skin-on) and sear for about 3-4 minutes per side, or until golden brown. Remove and set aside.
Step 2: Prepare the Sauce
- In the same skillet, reduce heat to medium and add butter.
- Stir in the minced garlic and red pepper flakes, sautéing for about 30 seconds until fragrant.
- Add the chopped sun-dried tomatoes and cook for another minute.
- Pour in the heavy cream and broth, stirring to combine.
- Sprinkle in parmesan cheese, oregano, and basil. Stir well and let the sauce simmer for 2-3 minutes until slightly thickened.
Step 3: Combine and Serve
- Return the salmon fillets to the skillet, spooning the sauce over them.
- Let the salmon simmer in the sauce for another 2-3 minutes until heated through.
- Garnish with fresh basil or parsley and serve with lemon wedges.
