Instructions

 Cook the Chicken:

  • Heat olive oil in a large skillet over medium-high heat.
  • Season chicken breasts with salt, pepper, thyme, oregano, and red pepper flakes.
  • Cook for 6–7 minutes per side, or until fully cooked and golden brown. Remove from skillet and let rest.

2. Prepare the Tortellini:

  • Bring a pot of salted water to a boil.
  • Cook tortellini according to package instructions (3–5 minutes). Drain and set aside.

3. Make the Sauce:

  • In the same skillet, sauté minced garlic for about 1 minute.
  • Add heavy cream and chicken broth, stirring to combine.
  • Simmer for 3–4 minutes, allowing the sauce to thicken slightly.

4. Add Sun-Dried Tomatoes and Spinach:

  • Stir in chopped sun-dried tomatoes and spinach (if using). Cook for another 2–3 minutes until spinach wilts.

5. Combine and Serve:

  • Slice the cooked chicken into strips and return to the skillet.
  • Add the cooked tortellini and Parmesan cheese. Stir until combined and heated through.
  • Serve hot, garnished with extra Parmesan or fresh herbs, if desired.
